"Live
Well, Love Much, Laugh Often"
This is a classic in our home and a sure
fire way to get the kids to eat broccoli. My daughter would
ask for this dish several times a week. Just the smell of garlic
cooking would have her asking, "Is it ready yet?".
I remember once in kindergarten, she insisted on taking this
to school for lunch. When she came home, I asked her how it
was. "Fine", she said. "But when I opened my
lunch everyone moved away from me". Never underestimate
the power of garlic - or of a little girl. She finished her
pasta and then on to dessert. God bless you SaraClaire, you

Rigatoni with Broccoli
1 lb. Rigatoni pasta
1 head of Broccoli (washed & cut-up into small pieces)
5 large cloves garlic (chopped)
3-4 tbsp. Olive oil
½ cup Locatelli Romano grated cheese
Red pepper flakes to taste
salt & pepper to taste

In a large pot, cook pasta until al
dente. Drain and set aside (reserve water in case pasta
is too dry).

In a medium saucepan, steam broccoli
until bright green or al dente. Drain & set aside.

In a large saucepan, sauté garlic
in olive oil (careful not to burn). Add red pepper flakes
and broccoli. Saute a little longer while mixing then set
aside.

Put pasta back into large pot, add broccoli/garlic
mixture, grated cheese, and salt/pepper to taste. Serve
immediately, as pasta will start to absorb juices and dry.
Add reserve water accordingly if this happens. Serve each
individual plate with additional grated cheese on top, some
Italian bread and your all set.
